From wild agave to artisanal mezcal, every step honors tradition
Wild Cuishe Harvest
We carefully select mature wild cuishe agave plants that have grown naturally in the UNESCO-protected Tehuacán-Cuicatlán Biosphere for 8-12 years. Local harvesters use traditional methods to sustainably harvest these precious plants, ensuring the wild agave populations remain healthy for future generations.

Earth-Baked Roast
The harvested agave hearts are slowly roasted in an underground pit oven (horno de tierra) lined with volcanic rocks. This traditional cooking method takes 3-5 days and imparts the characteristic smoky flavor to our mezcal while converting the agave's complex carbohydrates into fermentable sugars.

Tahona Milling
The roasted agave is crushed using a traditional stone wheel (tahona) pulled by horse or mule. This ancient technique gently extracts the sweet agave juice and fibers without over-processing, preserving the authentic flavors and character of the wild cuishe.

Natural Fermentation
The crushed agave and its juices ferment naturally in open wooden vats using wild airborne yeasts. This process takes 5-7 days and allows the unique terroir of Puebla to express itself in the final spirit. No commercial yeasts or additives are used.

Copper Distillation
The fermented mash is double-distilled in traditional copper pot stills. The first distillation separates the alcohol, and the second refines and purifies the spirit. Our master distiller carefully monitors the process, selecting only the heart of the distillate for bottling.

Hand Bottled
Each bottle is carefully filled, labeled, and sealed by hand. We take pride in every detail, from the quality of the mezcal inside to the presentation of the bottle itself. Every bottle represents our commitment to tradition, community, and exceptional craft.
